As we move into the 2nd half of 2016, we are refreshing the Four Chairs seasonal espresso blend with a new Brazilian component - Onzilla. This new component comes from the Sul de Minas region.
Sul de Minas is one of the main coffee producing regions in Brazil and accounts approximately 30% of Brazilian production of coffee. The mountainous terrain is ideal for coffee production. The altitude varies from 950 to 1300 m and the annual temperature stays around 22ºC to 24ºC.
Onzilla is a blend comprising of small and medium producers from the same micro area - Mantiqueira de Minas. The majority of the blend, which is of the yellow catuai varietal, came from two farms Fazenda Santa Mariana and Fazenda Caxambu. The blend was put together based on micro-region, cup score, and cup score. The Onzilla blend comprises of farms of altitude ranging from 1050m to 1250m.
During harvest, the cherries are hand picked, and “naturally processed” or otherwise known as sun-dried. This processing method helped in achieving a sweeter cup which enhances the overall sweetness of Four Chairs.
