As we step into the 2nd half of 2016, we bring you a new coffee to spur you on as the shopping spree kicks off with the Great Singapore Sale.

Located in the Diamantina Plateau, in the city of Piatã Biaha, Fazenda São Judas Tadeu belongs to Mr. Antônio Rigno, who has been a coffee producer for more than 25 years. This region has a temperature range from 2°C to 18°C in the winter resulting in good climatic conditions for coffee production of high quality. The area is widely different from other places in Brazil in terms of climate and ecotops. The flavour spectrum of coffees from this region would excite many coffee buyers. The farms are on the slopes of the Chapada Diamantina mountain range, and altitudes that can go up to 1400 masl, which is considered very high for Brazil.

Antonio strives to plant the coffee in a sustainable way, training the workers with the use of chemical pesticides and keeping the packaging of these products for recycling, in order not to harm the environment. He also plants trees in the area around the farm and provides jobs for the local families.
The harvest is done by hand, and women (called “panhadeiras de café”) perform most of the work. The coffee cherries are harvested selectively, in plastic bowls, twice a day, and after, they are taken by tractors to the depulping machine. The drying is done on patios. The coffee beans are spread in layers of about 4 cm and mixed many times a day. The dried beans are separated into numbered lots, and taken to the warehouse in the conditions recommended for the coffee storage.

You might notice when you get a bag of São Judas Tadeu that the beans are real small. It was quite challenging to roast this coffee the first time but the results were very encouraging. After testing out the different roast profiles, we decided on a profile to bring out its fruity character while developing it to a degree that enhances its nougat-like sweetness. There are delicate notes of peaches and melon, complemented by a milky mouthfeel. Its pleasant milk chocolate finish rounds up the cup nicely.
