Jingle bells ringing as we roll out a new coffee just in time for the festive yuletide season. The name might ring a bell to some as we had this coffee back in 2013. We are happy to bring it back to Nylon again this year.
Finca San José is located in the Sonsonate region of El Salvador, at an altitude ranging from 1379 to 1645 meters above sea level. Total area is 70ha, of which 53ha is planted with coffee, and the rest are native forests. Varietals include Red Bourbon (64%), Pacas (32%) and Pacamara (4%). While many of the Bourbon trees from the original plantation are more than 80 years old, they are still producing coffee.
During our recent trip to the country in February, we also found out that there had been a change of ownership of this farm recently. Our friends from the Pacas family (owners of Finca Santa Petrona), had bought over Finca San Jose. Hence it is now part of Cafe Tuxpal, which also manages and operates the wet and dry mill, Beneficio Tuxpal. Federico Pacas had been managing Finca San José for the previous owners, the Ruffatti family, for a while as they were not actively involved in the coffee farm. Hence, when the opportunity came to take over the farm, Federico and his family, decided that it was a strategic move as they would have full control of the farm, with the ability to produce more specialty coffee and also to carve out suitable plots in the higher parts of farm to grow more “non-traditional” varietals. When we visited the farm in February this year, we had a preview of some young trees in these new plots that looked really healthy. There is plenty of potential what’s in store from Finca San Jose, so we are really looking forward to the next few harvests.
This new coffee is all about balance and sweetness. Dried fruit acidity comes in the mid palate, followed by milk chocolate in the finish. It has a smooth and syrupy texture that enhances the coffee’s clean and sweet characteristics.
