Los Aguijotes is a small farm belonging to Nelson Zapata. The name ‘Aguijotes’ is loosely translated to the ‘land of the springs’. Herminio used to bring his harvested cherries to the cooperative for processing and sell them together with cherries from other producers in the community as a blend. Our friend, Eduardo Ambrocio met him a few years back and convinced him to separate out his lots and work with him instead after he tasted the Maragogype variety and thought there was huge potential in the cup.
You will notice that that the size of the beans is much bigger than usual. It is a natural mutation of the Typica variety that was first discovered near the Brazilian city of Maragogipe in 1870. Maragogype beans are especially large and many have found that the cup potential to be very good especially when grown at high elevation but it is also susceptible to diseases and has low yield.
The sweetness in this coffee captures your attention from 1st sip to the last. Plenty of fruit tones ranging from dried mango, pineapple and passionfruit, and finishing off with a long lasting aftertaste of stewed cherries. This is a cup that really draws your attention on first sip and carry through the drinking enjoyment being an incredibly sweet coffee with layers.
