 El Gorrion

Wilfredo Minga is a third-generation coffee producer. His farm, El Gorrión, is located in Callao, Ventanilla, at an altitude ranging from 1,696 to 1,800 meters above sea level. Covering 0.75 hectares, the farm is dedicated entirely to the Marshell variety, benefiting from loose, sandy soil that supports healthy plant growth.

For the future, Wilfredo aims to enhance quality and increase his output. He welcomes visitors to his farm, hoping that roasters can experience his work firsthand.

This coffee is a washed lot, with fermentation taking place in cement-polished tanks before slow drying on patios under protective covers. Wilfredo recognizes the challenges of coffee production, particularly the region’s heavy rainfall, which extends drying times. Therefore, he built a parabolic dryer for a more even drying under shade from the sun and rain.
